Recipe: Grilled Pork Tacos

Ingredients (Grilled Pork Tacos)

• 4 boneless pork chops

• 1/2 cup Mexicue Spice Rub

• 2 tablespoons kosher salt

• 10 wood skewers, soaked in water

• 12 5” corn tortillas

• 2 cups Chipotle Slaw

• Fresh cilantro for garnish

Ingredients (Mexicue Spice Rub):

• 1 tablespoon coriander

• 1 tablespoon ground black pepper

• 1 teaspoon ground ancho chili

• 1 teaspoon chipotle powder

• ½ teaspoon ground dried oregano

• ¼ teaspoon ground allspice

• 1 tablespoon granulated garlic

• 1 tablespoon paprika

• 2 tablespoons brown sugar

Ingredients (Chipotle Slaw):

• 1 head green cabbage, chopped

• 1 chipotle pepper in adobo sauce

• 1 cup mayonnaise

• ¼ cup apple cider vinegar

• juice of 1 lemon

• 1 teaspoon black pepper

• 1 tablespoon kosher salt

Ingredients (Guacamole):

• 3 ripe avocados, peeled and seeded

• 1 lime, juiced

• 1 teaspoon kosher salt

• ½ teaspoon cumin

• ¼ cup chopped red onion

• 1 tablespoon minced garlic

• 1 tablespoon finely chopped cilantro

• 1 grilled jalapeno peppers, diced

• ground chipotle powder

Instructions (Grilled Pork Tacos):

1. Cut pork chops into 1-inch cubes.

2. In a large bowl, coat the pork chops thoroughly with spice rub and salt.

3. Dry skewers and add skewer all pork cubes.

4. Allow to sit in the fridge for at least a couple hours or overnight.

5. Prepare gas or charcoal grill at medium-high heat on one side, leaving the other side very low.

6. Brush grill lightly with canola oil and add pork skewers.

7. Grill until the pork is nicely brown and cooked through.

Instructions (Guacamole):

1. In a large bowl add all ingredients (except avocado) and mix well.

2. Add avocado and use a potato masher to mash all ingredients together.

3. Taste for additional salt and lime juice.
